2022 Cabernet Sauvignon
This is the first year that we have taken fruit from Windowrie in Canowindra. A family run winery that was one of the first adopters to organics in NSW. Normally all fruit in Canowindra is picked during January and February but in 2022 we picked in March. It was apparently the best fruit they have seen off the old cabernet block in living memory, so we wanted to honour this by making as strongly concentrated and structural a wine that we could. The merlot was 30% whole bunch fermented and the cabernet sauvignon was completely destemmed. Both were macerated until just before cap fall and then aged in 5 year old barriques.
