2022 Pinot Gris
Our tendency for single white varieties is fermenting 2/3rds of the wine straight pressed and then topping with skin contact wine of the same variety. We use puncheons for our single varieties as we feel this is the best way to get the most complete expression of the variety. This wine has a slight blush like a rose because of the 1/3rd skin contact top-up and a nice soft tannin mouthfeel. Most importantly for us is developing texture and we achieve this by ageing the wine for 8 months in old oak on full lees.
