    Finally we had a growing season in which sugar levels could get high enough before the acidity was too low because of excess rain and cooler conditions. This fruit is from Antonio’s Vineyard in Canowindra. It is 30% whole bunches and macerated this way for several weeks. Developed lots of reduction mid ferment. Which added layers to this wine. Aged in a single French oak puncheon. So glad to have finally been able to make a bigger Shiraz like we were able to in the drought years.
