Canowindra as a region can be very hot and very dry. So often you have to pick grapes very early to maintain natural acidity. The question is how to pick early and also create a wine with lots of flavour. The answer is carbonic maceration!!! This red contains semi-carbonic Shiraz with an addition of Mataro rose (Rosnay Vineyard). Lots of red fruit character here, with a touch of stalkiness which is intriguing. Aged in old french oak barriques.
